Why are the fans on my GM Truck always running?

I have a 2011 Acadia that has just started running in upper 3/4 of temp gauge, then when I shut the car off the cooling fan runs for several minutes. It’s like it’s possessed. I have been through two temp sensors and still have the problem. It does not do it all the time but when it does it will stop and not do it for a while.
