What causes water to get in oil in engine?

All around the pass through is the coolant jacket. When the engine cools down the metal contract and oil seeps through to the coolant. Once warm and the metal expands again it makes a good seal, that is why the leak into the coolant is so slow. Not that bad of a job, turbo has to come off.
What should the oil temp be in a Cummins ISX?
Cooler temps comes up to 210 and fan goes on. Then coolant temperature drops back to 190 or so. That’s when going up hill. But oil continue to rise up to 270+, ( at least that’s what gage tells me) until msg appears ENGINE OIL IS TOO HOT! And then engine shuts Off.
Is it OK to put oil in water?
Oil pressure it’s ok, water temp ok, coolant level with engine cold about 1/2 of tank with engine hot full tank and some coolant in the left side of tank. There are no air bubbles in the expansion tank.
