Which Undertale ending is the true ending?

As you play through Undertale your actions will decide which endings you can achieve. Killing even one enemy (including Jerry) will mean that you can’t get the Pacifist ending – which is thought to be the game’s true ending and it is recommended you do this on your first playthrough.
Is it bad to do a true reset in Undertale?

Is everything gone after I True Reset?? Do I have to play Neutral and then have to play True Pacifist to reach the same ending, or does Flowey remember it all? What should I do? It doesn’t remember anything, actually none of the characters remembers, you can erase 99% of what you did after the true reset.
Does sans know about the resets?
Sans gets a little memory from non-true resets, but literally every other major character does. The only difference is Sans is AWARE ABOUT EXISTENCE OF RESETS and of course he’ll give those pieces of memory more importance. But that still doesn’t mean he remembers literally everything.
